Surfactant

A surfactant lowers the surface tension of water and makes it 'wetter'. Since oil and water do not naturally blend, a surfactant prevents the water from sticking to itself and helps it blend more easily with oil and grease. Good examples of surfactants are detergents and emulsifiers.
